The Green Monster

I'm not a breakfast eater. I'm just not hungry that early in the morning.  Unless I'm on vacation - then I take full advantage of the opportunity to order an omelette if I can because those are my favorite!  If I don't eat anything for breakfast, I can usually go a long time without feeling hungry and most days it's after 1pm before I get around to eating anything.  In my experience, if I eat something for breakfast, I'm more hungry.

After watching the documentary Fat, Sick, and Nearly Dead, I  decided to try something new.  I wanted to see if eating a good breakfast would make a difference in my day.  I thought I would try to incorporate more fruits and veggies in my diet.  Now don't get my wrong, I love fruits and vegetables.  I eat my weight in fresh vegetables from my dad's garden every summer!  But I knew I could be eating a lot more, especially green leafy things like spinach.  Because lets face it, in the past most of my spinach consumption came from a dip!


Monday morning I started my breakfast quest.  Thanks to Pinterest, I found this smoothie recipe and decided to give it a try.




It started out looking so colorful and tasty.  And then...........



This is what the recipe warned about.  How the concoction would turn a very unappetizing brownish color.  They weren't kidding!!  My colorful work of art had turned into speckled brown sludge.  I was getting nervous.  



Pouring my creation into a green cup didn't help it's appeal either.  I knew it was mind over matter, so before I took my first sip I closed my eyes.........................



and imagined I was on an exotic beach somewhere (with my husband of course) and the waiter (from the 5 star luxury resort we were staying at) had just brought this yummy smoothie to my cabana (where I was laying in a lounge chair with the body I had when I was 18.)  


I finally tasted it and was jolted back to reality.  I was pleasantly surprised!  I couldn't taste the spinach at all.  It was really, really good.  Even my 6 year old asked for seconds when I let him try some.  I liked this smoothie so much I even had it the next day for breakfast too.

Now it's only been a few days, but I'm feeling a little better during the day since eating breakfast.  I've been struggling with very bad headaches the last several weeks, and it seems they have been much less intense this week.  Maybe Popeye was on to something eating all that spinach.  Who knows, I might become a breakfast believer after all.

Tomorrow's breakfast?  I'm trying the new Peanut Butter Multi-Grain Cheerios.

I've heard about these - I'll have to try it....It's just kinda hard to blend up anything at 5:00 am. :)

I should try this recipe...I'm not a breakfast person either though. If I have a smoothie it's usually at dinnertime(weird?). I love spinach in them but the color is gross so I always try to put it in a non-clear cup so that I don't notice:)

And by the way I'm loving your weekly pictures. They're so good!

I may have to try that. I have to take the synthroid and wait an hour, but then I have to take a med that you HAVE to have food with and I hate breakfast. My stomach rebels every time!

I had a monster smoothie on Wednesday with the kids. I don't care what anyone says - you CAN taste the spinach. The thing is - it doesn't taste bad!!! Our smoothie was delish! (Although I didn't follow the same one as you. We've been tweeking our smoothies for months now.)

I tried the MG PB Cheerios today. Why they didn't make these sooner I will never know...
