My friend Alissa tagged me and said I needed to post 3 recipes on my blog or I'll experience severe hair loss and thousands of years of bad luck or something like that. Since I don't need any bad luck right now and I prefer to keep the hair that I have, I will share 3 recipes with all of you. Plus, we can all benefit from new dinner recipes, right? Now I love to collect recipes and it was hard for me to narrow it down to 3, but these are tried and true family favorites----If you try any of these let me know!
OPULENT CHICKEN
In a 9x13 pan lay about 4 or 5 boneless skinless chicken breasts (you could also use tenderloins.) Cover chicken with slices of Swiss cheese. Now make a sauce combining:
2 cans Cream of Chicken soup
1/2 cup sour cream
1/4 cup water
Pour sauce over chicken and cheese. Crumble 1 sleeve of Ritz crackers and mix with a melted stick of butter. Sprinkle the crumbs over the top of the casserole. Bake at 375 degrees for about 45 minutes to an hour. Serve over rice. (Note: if you use chicken tenderloins it will cook alot faster.)
OLD FASHIONED CHILI
1 or 2 cans kidney beans, drained (16 oz)
1 large can tomato juice (46 oz)
1 pound ground beef
2 small white onions, chopped
1 bay leaf
1 1/2 teaspoon each of chili powder, cumin, and salt
pepper and garlic to taste
Brown meat and onions together in the bottom of your pot, then add all the remaining ingredients. Stir well and simmer for about 30 minutes. Make sure you remove the bay leaf before serving and if too thick you can add a little water. (Sometimes I add a can of diced tomatoes for extra flavor.....truly tastes better the 2nd day.)
CROCK POT ROAST
Place a beef roast in bottom of crock pot ( I usually buy a 4-5 pound rump roast.) Season roast with salt, pepper, and onion powder.
GRAVY:
3 cans Cream of Mushroom soup
1/2 can of water per soup
1 envelope brown gravy mix
onion powder
salt and pepper
Whisk all gravy ingredients together and pour over the roast in Crockpot. Cook on LOW for about 8 hours or on HIGH for 4-5 hours until tender. Serve with mashed potatoes--the gravy is excellent on the potatoes!
Okay, now I'm really hungry!!

I love that chicken, and I needed the receipe. I am glad to hear that Tanner is OK. That is scarey.
