Linked 52 | Week 10 - Vegetables

This week's theme was Vegetables.  Now this is a theme I can really sink my teeth into (pun intended.)

I was looking through a cookbook and the first line of the vegetable section resonated with me...........I absolutely love vegetables.  I feel the same way.  There is hardly a vegetable I've met that I haven't liked, yes even brussels sprouts!  Some of my favorites are green peppers, cucumbers, asparagus, beets, squash, cauliflower, broccoli, corn and peas.


When I think of vegetables, I think of my Dad.  Lucky for me, my father is a very talented gardener and has had an amazing garden almost every year for over 30 years.  As a little girl growing up in Texas, I remember eating big bowls of freshly sliced cucumbers and tomatoes or going out to the pea patch and just sitting there eating as many peas as I could get my hands on.  Those wonderful memories are now a part of my own children's lives too.  Every summer we spend time at my parent's house in Utah where my Dad keeps the biggest garden he's ever had.  My kids will sit outside with their cousins and devour a huge bucket of peas or have "cucumber popsicles."  We gorge ourselves on as many cucumbers, peppers, potatoes, onions, tomatoes, and beets that we can eat. There is nothing as delicious as a fresh cucumber or tomato still warm from the summer sun.  It's too bad we didn't have the Vegetable theme in the summertime -  I could make your mouth water with pictures of all the goodies from my Dad's garden.  Forgive the iPhone photo, but here is a pic I took last August of the haul of vegetables I brought home from Utah.  These beauties were quickly turned into salsa :)




While my kids love to eat grandpa's veggies, they sometimes turn their noses up when I serve vegetables with dinner - which means I'm the only one that eats them.  I'll heat up a bag of frozen broccoli or make a green salad to try to appease them, but the one vegetable everyone agrees on?  Canned corn.  It's not the greatest I know, but I'll take what I can get :)

Okay....I am so envious of your dad's garden! What a gift! And those tomatoes....my absolute favorite. Those look so yummy and ripe...I can't wait until summer when tomatoes here are actually good again!!

What wonderful memories of growing up! I would pay to visit your dad's garden. My kids used to eat the warm tomatoes off the vine like apples. Loved seeing their little hands get juicy.
You need to tell me how to make beets....it's the one veggie I have yet to support. Ha!

Mmm, summer is the only time of year I will eat a tomato (unless it's in a sauce). Fresh veggies are the best. Warm strawberries are scrumptious too.

i am hoping to get a garden started this year. so glad my mom n boyfriend's mom would be able to help. that's so cute how you enjoyed your dad's garden and now your children can as well. that's a great bond, the garden.

Lucky you with all those home grown vegetables. I bet it made the best salsa.

Now THAT is a lot of good looking tomatoes! YUM! They are my absolute favorite in the summer. Especially cherry tomatoes. And cucumber popsicles?...Do tell more. That sounds rather refreshing on a hot day!

I loved it when my mom had a big garden. Something about a garden is just so... right. I've been missing my own large garden after selling my house and moving recently, but I'm committed to starting another. Growing veggies is truly a wonderful thing.

your dad's garden sounds like a dream! those tomatoes probably made some pretty great salsa. hope you post some more photo in the summer.
